Belgian Waffle Delight

2 cups organic cake flour
2 tsp baking powder
½ tsp salt
4 organic eggs, separated
2 tbsp organic sugar
½ tsp vanilla extract
4 tbsp unsalted butter, melted
2 cups low-fat milk
ham cold cuts (optional)
organic maple syrup

 

optional garnishes…
¼ cup organic strawberries
¼ cup organic gooseberries
¼ cup organic blueberries

¼ cup organic raspberries
      • Preheat waffle iron (see your manufacturer’s instructions).
      • Sift flour, baking powder and salt in a medium-sized bowl.
      • In a second bowl, beat together egg yolks and sugar until eggs turn a pale yellow and sugar is dissolved.
      • Add vanilla, butter and milk to eggs and whisk until blended into a batter.
      • Use a mixer to beat egg whites in a third bowl for about one minute.
      • With a spatula, fold egg whites into waffle batter.
      • Use non-stick spray to coat waffle iron and pour enough batter to cover grid.
      • Close and cook for two to three minutes or until golden brown.
      • Place waffle on serving plate, add two thin slices of ham cold cuts and fruits.
      • Drizzle desired amount of maple syrup and serve.
