Rodney's Quick Grilled Calamari

as seen in New Possibilities 2010 from Bitoque Restaurant in Montreal

 

 

Ingrediants

2 whole calamari, cleaned and rinsed
salt and pepper to taste
pinch of fresh coriander
light splash of olive oil
lemon wedge

 

 

Instructions

  1. Turn the grill to medium-high. Close lid.
  2. Place calamari on grill and close lid. Mark them lightly (it takes about a minute and a half on each side), or until firm. Be careful not to char the squid as they can be tender and will burn easily.
  3. Plate with the remaining ingredients as desired. Chef’s tip: you can combine all ahead of time and cover calamari before grilling.
