Pan-Roasted Arctic Char

Serves 1 | Prep Time: 30 minutes, Cook Time: 30 minutes

 

Ingrediants

1 3-pound whole Artic char, scaled and cleaned
1/4 cup (60ml) olive oil
salt and pepper to taste
garnishes, herbs and spices (or trout), dressed, fully cooked

 

Instructions

1. Preheat the oven to 350°F (175°C).
2. Rinse the fish and pat dry. Season the fish inside and out with a blend of herbs and spices. We chose a blend of rosemary, oregano and parsley. You may also stuff the fish with potatoes, for example. Tie the fish closed with kitchen string.
3. Heat an ovenproof pan over high heat and add olive oil. Place fish and cook on each side for approximately 2 minutes. Place in oven and roast 20 minutes or until cooked.
4. Serve with garnishes as desired.
