Asian Chocolate Truffles

Serves 24 | Prep Time: 8 hours to let ganache set; Cook Time: 10 minutes
1 cup (250ml) cream
3tsp (15ml) matcha green tea
9oz (250g) Green & Blacks dark chocolate (highest content possible works best)
9oz (250g) cocoa powder
1. On medium-low heat in a large saucepan, heat the cream and tea. Bring to a slow simmer, adding the chocolate, stirring constantly until fully melted.
2. Spread on a baking sheet and put in the refrigerator for about 8 hours.
3.Once the chocolate is set, roll it up into small balls and proceed to roll it in the cocoa powder to fully coat.
