Barbecue Applesauce Pulled Pork Sandwich with Zucchini Slaw

Shake up your lunch routine with this sweet and savoury sandwich. Easy to make and absolutely delicious, it’s sure to have your mouth watering!

Serves 4

Pulled Pork:

  • 1 tsp chili powder
  • 2 tbsp brown sugar
  • 2/3 cup hickory BBQ sauce
  • 2/3 cup applesauce
  • 1/2 tsp ground pepper
  • 1 (3lb) pork loin
  • 4 burger buns or hotdog buns

Directions:

  1. Mix all sauce ingredients (everything but the pork) together in a bowl.
  2. Put pork loin and sauce in slow cooker.
  3. Cook 6-8 hours, or until tender, on low heat.
  4. Break apart pork with a fork.
  5. Turn off the slow cooker and let the pork loin sit for 10 minutes uncovered.

Zucchini Slaw:

  • 1 cup zucchini, shredded
  • 1 small jalapeno, seeded and minced
  • 1 small mango, chopped
  • 3 tbsp mayo
  • 2 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1/2 tsp garlic salt

Directions:

  1. Combine all ingredients in a small bowl.
  2. Toast buns and generously top with pulled pork and zucchini slaw.
  3. Enjoy!
