Crab and Avocado Salad 

Serves 3 | Prep Time: 20 minutes, Cook Time: 10 minutes

Ingredients:

  • 3 cups of crab meat, available at most grocers
  • canned or fresh
  • 4 avocados
  • ¼ cup green and red pepper blend, finely chopped
  • ¼ clove garlic, minced
  • ½ cup desired greens
  • 1 tbsp olive oil
  • Mayonnaise as desired
  • Limejuice, freshly squeezed if desired

Preparation:

  1. Combine crab, peppers and garlic and blend together (for example, like you would a tuna salad), adding mayonnaise for desired creamy consistency.
  2. Peel and pit avocados. Iin a large bowl, add olive oil and gently blend together by hand for desired consistency, adding in limejuice to taste.
