Almond Financier

For Almond Financier :

  • 2 tablespoons (30 g) unsalted butter
  • 1 cup (120 g) finely ground almonds
  • 1 2/3 cups (170 g) confectioner’s sugar
  • 1/2 cup (60 g) unbleached all-purpose flour
  • Pinch of salt
  • 3/4 cup (180 ml) egg whites
  • 3/4 cup (180 g) unsalted butter, melted and cooled
  • 1 pineapple cut into cubes
  • 1 cup (120 g) vanilla whipped cream

How to :

  1. Preheat the oven to 450°F (230°C).
  2. With a pastry brush, use the 2 tablespoons of melted butter to thoroughly butter the financier molds.
  3. In a large bowl, combine the almonds, sugar, flour and salt. Mix to blend. Add the egg whites and mix until thoroughly blended. Add the 3/4 cup of butter and mix until thoroughly blended.
  4. Spoon the batter into the moulds. Bake until the financiers just begin to rise, about 7 minutes. Reduce the heat to 400°F (200°C) and bake until the financiers are light brown and begin to firm up, about another 7 minutes. Turn off the oven and leave in the financiers until firm, about another 7 minutes.
  5. Remove the baking sheet from the oven and let the financiers cool in the moulds for 10 minutes. Almonld. Serve with fresh pineapple and whipped vanilla cream.
