Croque Madame

Ingredients:

  • 8 pieces challah bread
  • 16 thin slices Pied-de-Vent cheese
  • 8 thin slices smoked ham
  • 250 ml (1 cup) butter
  • 4 eggs
  • Shaved truffle pieces and pinch of chives to garnish

Preparation:

  1. Preheat the oven to 190°C (375°F). Spread béchamel (go to vivamagonline.com for this recipe) on each piece of challah. Lay the slices of Pied-de-Vent cheese on top of the béchamel. Place the smoked ham slices on half of each sandwich and top with the remaining side.
  2. Heat 2 nonstick pans and melt 125 ml (1/2 cup) of the butter in each. Place 2 sandwiches in each frying pan and brown both sides of the croque. Bake in the oven for 3 to 5 minutes or until the cheese melts. Meanwhile, in another large frying pan, fry the eggs sunny side up in a little butter. Place the croquemesdames on 4 plates and garnish each croque with an egg.
