What better way to keep things simple than to prepare a meal on the grill? It’s the season’s ideal form of cooking. Nothing whets the appetite more than the enticing aromas of a barbecue hard at work. This summer take your barbecue skills to new heights with these four flavour-packed meals – really delicious, yet easy to pull together. They’ve been paired with a variety of unique beer styles (see page 78) that showcase what great beer is all about. So get your tongs out, pour yourself a beer and enjoy this wonderful time of year.

Stilton-stuffed Burger with Caramelized Onions

INGREDIENTS:

•2 lb good quality lean or medium ground beef

•2 tsp fresh thyme, finely chopped

•1 tbsp Worchestshire sauce

•1⁄2 tsp salt

•1⁄2 tsp freshly ground black pepper

•3 oz Stilton cheese, cubed into six equal pieces

for garnish:

•2 tbsp grainy Dijon mustard

•2 tbsp mayonnaise

•Boston lettuce or arugula

•caramelized onions (Turn to page 78 for recipe)

•6 brioche (egg buns), halved crosswise DIRECTIONS:

1. In a large bowl mix together beef, thyme, Worcestershire sauce, salt and pepper. Once ingredients are combined, form mixture into six equal patties about one-and-a-half inches thick. Don’t pack too tightly or burgers will become dense and heavy. Place a cube of Stilton in the middle of each patty, pushing it into the meat and making sure it is fully enclosed. Reform the patty if necessary.

2. Heat an oiled grill to medium-high, place patties on the grill and cook for five to seven minutes on each side, or until desired doneness.

3. While burgers are finishing warm brioche buns on cooler part of the grill.

4. Serve burgers topped with mayonnaise, grainy Dijon mustard, caramelized onions and lettuce.
